Gluten free chocolate chip cookies

Traditional chocolate chip cookies with a twist! :)

When I was diagnosed with celiac disease, I started baking and playing with gluten free recipes. For those not aware, celiac disease is a chronic autoimmune disorder that affects the small intestine when gluten (wheat, rye, barely) is consumed. Throughout my blogging journey I will share how this diagnosis has affected my day to day. Friendly reminder, being gluten free is not something I do to "be healthy". It is a serious health condition that I have to prioritize in order to be healthy and stay healthy. Please be conscious when you are discussing gluten free to people. Having celiac and being gluten free is a MASSIVE difference. Ok, now back to the cookies...


These chocolate chip cookies have become a staple in my house. My family and friends love them. Better yet they do not have that "gluten free taste". I mean, they are soft, filled with goodness, and a dash of mushroom powder - what else could ya want!? Before you panic and shy away from making these, mushroom blends are safe and healthy to cook with!




I bought this mushroom blend from the Sarasota farmers market and really like.

Enough reading, ready to bake!?


Section 1: Gather your ingredients

  • 1 1/3 Gluten free flour

  • 1/4 cup of coconut flour

  • 1 tsp baking soda

  • 1/2 tsp kosher salt

  • 1 tsp mushroom powder blend

 
  • 1 stick of butter

  • 1 tablespoon milk

  • 3/4 brown sugar

  • 1/4 granulated sugar

  • 1 large egg

  • 2 tablespoons 100% pure maple syrup

  • 1 cup chocolate chips

  • Sea salt


Section 2: Follow the directions!


  1. In a medium bowl lightly mix together your dry ingredients

    1. Flours

    2. Baking soda

    3. Salt

    4. Mushroom powder

  2. Melt butter in a medium skillet on medium-high heat

    1. Only until bubbly

    2. Pour into a medium bowl

  3. In your butter bowl add the following:

    1. Milk

    2. Brown sugar

    3. Granulated sugar

  4. In that same bowl whisk in the following:

    1. Egg

    2. 100% pure maple syrup

  5. Mix in your dry ingredients. Stir until combined. DO NOT over stir!

    1. Stir in chocolate chips

  6. Cover bowl with wrapping and let sit for 30 minutes at room temperature


While your cookies sit - preheat the oven to 350

Roll the dough into balls and place on baking sheet


  1. Bake 8-9 minutes. DO NOT bake over 9 minutes. (Trust me!) These cookies will bake fast and as soon as they are golden on the edges they are good to come out. Set your cookies on a baking rack for 5-10 minutes. Viola! Your cookies are ready. Best served right away :)
